A Uruguayan cook living in a village in Beira Baixa since 2001, who found in fire, local produce and regenerative agriculture a slower, more conscious and nature-connected way of cooking.

Leandro was born in Uruguay and has lived in Portugal since 2001. In a small village in Beira Baixa he found a place where the rhythm of the land, the seasons and the people changed the way he cooks.

Fire has been present since childhood: flames, embers, firewood and simple meals gathered around the flame. Today, that early experience lives in the kitchen.

His work centres on fire: grills, cast iron pots, slow roasts, charred vegetables and broths that gain depth over hours.

Rather than following trends, he seeks an honest and conscious cuisine, inspired by the gastronomy of many places but rooted in local produce, organic ingredients and regenerative practices.

The mission is simple: to create genuine and joyful food experiences that nourish body and soul, respecting the land from which everything comes.

The kitchen begins nearby.

Leandro works with local produce from Beira Baixa, following the seasons and keeping close ties with those who sow, harvest and grow.

Each dish is a way of giving something back to the territory: vegetables, fruit, legumes, olive oil, herbs and other ingredients that travel a short path from land to plate.

regenerative agriculture

Whenever possible, ingredients come from regenerative agriculture: ways of producing that seek to regenerate the soil, increase biodiversity and care for water and life around it.

This means prioritising producers who use cover crops, rotations, crop diversity and less dependence on aggressive chemicals.

conscious cooking

Cooking with fire is a conscious act.

It is not about spectacle, but about attention: to time, to heat, to the food and to the people who will sit at the table.

Recipes may change with the year and the landscape, but the foundation is the same: good ingredients, honest techniques and the desire to serve flavourful, nourishing food that respects nature.
